Always curious and willing to explore, Giannis creates unique cocktails based on local, seasonal products and a zero-waste philosophy. He is present in bartending competitions continuously and finalist in World Class Competition three years in a row. Inspired by the global bar scene he developed an - in house - series of fine new age sodas, fruit wines and ciders!

Giannis and our Xalavro Open Bar Team as in any other living and developing project, are a very strong and active group that consists of experienced and qualified professionals with a vision and fresh ideas.
